Baja Fresh testing made-to-order burrito

Editor’s Note:Baja Fresh in San Clemente is testing a build your own burrito option, where customers fill out a form that details everything they want stuffed in their burrito.

Other fast-casual chains that do this include Which Wich and The Counter. Baja Fresh, which recently relocated its headquarters from Cypress to Irvine, declined to comment on the test item. I had my intern Sepideh Nia give the burrito test a try. Here’s what she had to say.

“The front of the store had a small table with several pads and pens on it. The pad had options of creating a burrito, bowl, or salad. Then the decisions got more difficult.

For $6.89 (plus tax), the burrito comes with your choice of six protein options (chicken, pork carnitas, steak, crispy wahoo, grilled wahoo or shrimp), a cheese (jack cheese, jack and cheddar mix, cotija cheese, or queso fundido), four ingredients (black beans, pinto beans, baja rice, green chile rice, fresh guacamole, avocado slices, diced tomatoes, sour cream, onlions/cilantro, corn and pepper mix, roasted corn salsa, sliced jalapenos, grilled veggies, lettuce, cabbage or chip strips), and up to two fresh salsas or dressings (pico de gallo, mango salsa, avocado salsa, salsa baja, fish salsa, salsa verde, enchilada sauce, salsa molcajete, diablo salsa, 6 chile salsa, salsa crema, ranch, chipotle glaze, cilantro ranch, vinaigrette, or chipotle vinaigrette).

There is a veggie option, at no extra cost. Each additional cheese is 75 cents and each additional ingredient, 50 cents. For $2 extra, you can order the burrito enchilada style (smothered in enchilada sauce and topped with melted cheese).

I chose a chicken burrito filled with black beans, baja rice, fresh guacamole, and onions/cilantro. After filling out the pad with my order, I took it to the register. From there it was business as usual at Baja Fresh. My order was input at the register and sent over to the kitchen. Unlike other “build your own” places, like Chiplote, my burrito was not made in front of me.

This new build your own burrito idea is not the first of its kind. Popular chain, Chipotle Mexican Grill has been serving custom burritos and tacos for some time; however the new test at Baja Fresh has more options.

I’m not sure the new menu item will go beyond the testing stage, but I hope it does.”
